What could be better on a summer night after a day at the beach, than a bonfire? With friends and family gathered around telling spooky ghost stories and singing songs, the only thing left to do is make some good food! S’mores are great, but with a handful of hungry people why not make an entire campfire meal? Here are some recipes for great bonfire meals everyone will love.
Appetizer: Fire Roasted Nachos
- Fill a disposable aluminum pie pan with tortilla chips, cheddar cheese, tomatoes, peppers, black beans and salsa.
- Cover in foil and hold it over the campfire with long cooking tongs.
Main Course: Pigs in a Blanket
- Begin by roasting the hot dog alone.
- Take small round pizza dough and wrap it around the hot dog.
- Cook until crispy.
Side Dish: Grilled Cheesy Potatoes
- Place sliced potatoes in the center of a square of aluminum foil.
- Add onions, garlic, salt and pepper, lots of cheddar cheese and olive oil.
- Crimp the foil together and hold over the fire with a stick.
Dessert: Banana Split S’more
- Cut a banana down the middle and place it on foil.
- Stuff the middle of the banana with chocolate chips and marshmallows.
- Crimp the foil together and hold over the fire with a stick.

Dear Boardwalk Management,
Sorry for sending the following “well done” comment since my late February stay (2/21 & 22/2012) as I have been traveling on business quite a bit in the month of March.
First, a big thank you to Tom, who pinched hit for Enos while Enos was away on vacation. Tom went the extra mile to make sure our room and stay was the best it could be; Tom’s has always treated us very good.
Also, the entire staff, including in your dining facility, is always very friendly and very professional.
Every year, for the last twelve years, I have stayed at the Boardwalk Plaza as the Boardwalk Staff make me feel like a part of the family.
Well done.
Regards,
Tony Bonura
